Kerala Chef Competition:

The Spice Route Culinary Festival is a mega International event conducted jointly by Kerala Toursm, Government of Kerala and UNESCO (United Nations Educational, Scientific and Cultural Organization). This event will be held at Bolgatty Palace and Resorts, KTDC, Cochin, from 23rd to 26th September 2016.

Who can apply?:
Category I: Professional Chefs, from the industry (Entry subject to scrutiny of application forms)
Category II: Amateurs – Any person with an interest in culinary arts (Entry subject to scrutiny of application forms)

The competition would be in two phases as listed below:
Phase 1: Regional qualifying rounds to be held from 19th to 23rd of September 2016
Phase 2: Finals to be held on 26th September 2016

Along with a recipe for 4 portions of one dish which is typicallytraditionally from Kerala, highlighting the judicious use of local ingredients and spices. The dish can be made from meat, poultry, seafood or vegetarian (No snacks and sweets). Participants have to send in recipe along with application form.

Rules:
** Only one candidate from one Hotel can participate in the professional category.
** Candidates in the professional category should be in appropriate uniform. Candidates from amateur category should wear apron and cap/hairnet.
** No entry fee will be charged.
** Candidates should bring all ingredients required.
** Only two burners per person and work area will be provided.
** Candidates should bring all other required equipments specific to the dish. All participants must report at least 30 minutes in advance to the help desk.
** Cooking time will be 3 hours. Pre-prepared ingredients cannot be brought from outside into the venue. All pre-preparations have to be done on the spot.
** Last date for receipt of duly filled in application forms with the sample recipe is 8th September, 2016.

Judging Parameters:
** Cleanliness and hygiene – 10 marks.
** Mis-en-place (Pre-preparation) – 10 marks.
** Preparation – 20 marks.
** Portion size – 10 marks.
** Aroma, taste, texture – 30 marks.
** Presentation – 10 marks.
** Relevance to spice route theme – 10 marks.
